Description

Our Ethiopia Guji Danbi Udo single-origin coffee is our fragrant standout. It’s one our founder, Joy, drinks regularly and really enjoys. She describes it as, “You can smell the fruit and floral character immediately. It’s like perfume, in a good way.” In the cup, it’s smooth and delicate with jasmine-like florals, subtle pomegranate, light toffee, and a bright, tea-like character.

This coffee is for people who enjoy lightly roasted, delicate, tea-like coffees that are bright and floral. A must-try if you want to experience just how different specialty coffee can taste.

Our team recommends either pour-over or cold brew to really bring out the aroma and flavors. At our sister cafe, Elabrew Coffee, we also use coffees like this for Kyoto-style cold brew, slowly dripping water through the coffee for roughly 18 hours and serving the finished coffee straight rather than as a concentrate.

Natural Process

Danbi Udo is a natural-process coffee. Ripe coffee cherries are handpicked and carefully sorted before being spread in thin layers on raised drying beds. The cherries dry intact in the sun and are turned regularly to promote even drying. Depending on conditions, this process takes approximately three to four weeks before the dried cherries are hulled.

Drying the coffee inside the fruit allows the coffee and cherry to remain together throughout the process, helping contribute to the sweetness, fruit, and aromatic character associated with this lot.

About Danbi Udo Processing Station

The Danbi Udo station is owned by Hailu Abebe of Demand Trading PLC and processes specialty coffee grown by smallholder farmers throughout Ethiopia’s Guji Zone. Farmers handpick ripe red coffee cherries before delivering them to the station, where the coffee is sorted and processed to protect quality before being sent to Addis Ababa for dry milling.

Coffee in this area is grown at elevations ranging from approximately 1,950–2,200 meters above sea level. These high-elevation growing conditions contribute to dense green coffee beans and the nuanced flavor profile Guji coffees are known for.

Ethiopia’s Guji Zone

Guji is one of Ethiopia’s most distinctive specialty coffee-growing regions. Rich volcanic soils, high elevations, forest canopies, shade trees, and favorable temperatures help create coffees known for clarity, sweetness, florals, and complex fruit character.

Many smallholder farmers in the region grow coffee alongside crops such as avocados, mangoes, and legumes. This diversity is part of the agricultural landscape surrounding coffee production throughout the region.

How Ethiopian Coffee Is Graded

Ethiopian export coffees are traditionally graded according to cup quality and physical preparation. Grades 1 and 2 are reserved for coffees with higher-quality cup profiles and minimal defects, with Grade 1 representing the highest level of preparation and sorting.

For specialty coffee buyers and roasters, these grades provide one useful benchmark when evaluating green coffee, but the final decision still comes down to how the coffee actually tastes in the cup.

Ethiopian Coffee Varieties

Farms supplying Danbi Udo grow a diverse mix of regional landraces and selections developed by the Jimma Agricultural Research Center (JARC), including 74110, 74158, and 74112, alongside local varieties such as Badessa, Wolichu, and Kudhume.

This genetic diversity, combined with Guji’s elevation and microclimates, is one of the reasons Ethiopian coffees can offer such distinctive and nuanced flavor profiles.

Ethiopian Coffee History

Ethiopia is widely regarded as the birthplace of coffee and has centuries of coffee-growing history. Smallholder farmers have maintained an extraordinary diversity of coffee genetics across regions such as Guji, Sidama, and Yirgacheffe.

Today, producer networks and community processing stations such as Danbi Udo continue that tradition by connecting smallholder-grown coffees with specialty coffee buyers and roasters around the world. Selective picking, careful sorting, natural processing, and the region’s diverse coffee varieties all contribute to what ultimately reaches the cup.
